Chocolate Chip Cookies

Uhg. I hate baking cookies. I never get them to look like...cookies. They either end up being charred or flat like some alien looking biscotti. It just never happens. That's exactly what these cookies ended up looking like, alien biscottis, but they were pretty yummy. A coworker of mine, Morgan, had requested these cookies. I usually make a cake or cupcakes every Wednesday or Friday for my coworkers to test out a new recipe that I have tried out or created.

I took this recipe of chocolate chip cookies and decided to add the taste of walnut and oatmeal.

I really don't know why my cookies never come out plump. I really have tried everything. Hopefully someone can tell me what Im doing wrong.

Ingredients for Chocolate Chip and Walnut cookies


1 1/2 cup of butter, softened to the touch
1 1/2 cup of sugar
3/4 cup of firmly packed light brown sugar
4 large eggs
2 1/2 tsp. of Vanilla
3/4 tsp. Baking soda
1 tsp. lemon juice.
3 cups of All Purpose Flour
1 cup of Old Fashioned Oatmeal.
1 tsp. salt
1/2 tsp. of fresh ground Cinnamon ( or just reg ground cinnamon. I like to make my own since its stronger)
2 1/2 cups of Semi-Sweet Chocolate Chips ( I used Ghirardelli)
2 cups of crushed Walnuts

Instructions for the cookies

Now, These cookies had no visible trace of walnuts. I crushed them so much that you could taste the walnuts, just not see it. I had originally used 3 cups of chocolate chips but saw that it was too much so I put 2.5 cups instead. If you like a lot of chocolate then by all means add that other half cup.

You can start by preheating your oven to 350 F. Line your baking sheets with parchment paper. Place the butter in the bowl of your mixer and attach a Paddle utensil to the mixer. Cream the butter for 2 minutes and add the sugars slowly.

Beat on medium speed for another 2 minutes after all the sugar has been added. Add the eggs one at a time beating well after each addition.


Here is where I took the time to dip a spoon into this butter/sugar mix. I looove this part even though it has raw eggs in it. Yes, I know. I just don't care.

Mmmm so delicious.


OK back to the instructions.

Add the vanilla and lemon juice and mix well. In a separate bowl, mix all the dry ingredients together like the flour, baking soda, oatmeal, salt, and cinnamon.

Add the creamed butter mix to the dry ingredients and blend well for 3 minutes.


Add the chocolate chips and crushed walnuts to the batter and mix with a spatula.


Take a 2 ounce ice cream spoon and scoop up the batter and drop it on the parchment paper 2 inches apart from each other in all directions.

Bake for 10 to 15 minutes or until lightly brown. cool on wire racks and Viola! Chocolate chip cookies!

Great post.

Have you tried putting your cookie sheets in the freezer for a bit before putting your dough on them? Sometimes a hot cookie sheet can make the dough spread to soon, making them flatten out even more while they are baking.

It may also be that you have to high of a liquid content in your cookies. But if this happens with different recipes, then that's not it.

It could be your oven temperature as well. Have you tried using a small oven thermometer that you set or hang in your oven? Sometimes the temp the oven meter tells you is not the temp that your oven actually is. It's a good thing to check.

And lastly, you may need to change your cookie sheets. The ones that everyone seems to have (the dark metal ones with the 1/2 inch sides, often do more harm than good to your cookies. The darker the cookie sheet, the hotter they get. Try using a ligther cookie sheet. You can find them at any kitchen supply.
